We’re having a heat wave over here and as much as I would love to eat all the ice cream I can get my hands on, I need to practice some self-control. I saw these Chocolate Almond Butter Popsicles on Elana’s Pantry who got it from Amy Green’s book titled “Simply Sugar and Gluten-Free: 180 Easy and Delicious Recipes You Can Make in 20 Minutes or Less.” They were so easy to make and my kids loved them! Cools you down quickly on a hot summer day! These popsicles are truly guilt-free because they’re sugar-free, gluten-free, dairy-free and packed with protein.
- 2 large bananas
- 1/4 cup of almond butter
- 1/4 cup water
- 2 tbsp unsweetened cacao powder
- 1 tbsp of vanilla extract
- 1/4 tsp of Stevia extract powder
- Mix all ingredients in a blender.
- Pour into popsicle molds.
- Freeze then enjoy!
