Chocolate Almond Butter Popsicles

We’re having a heat wave over here and as much as I would love to eat all the ice cream I can get my hands on, I need to practice some self-control. I saw these Chocolate Almond Butter Popsicles on Elana’s Pantry who got it from Amy Green’s book titled “Simply Sugar and Gluten-Free: 180 Easy and Delicious Recipes You Can Make in 20 Minutes or Less.” They were so easy to make and my kids loved them! Cools you down quickly on a hot summer day! These popsicles are truly guilt-free because they’re sugar-free, gluten-free, dairy-free and packed with protein.


  • 2 large bananas
  • 1/4 cup of almond butter
  • 1/4 cup water
  • 2 tbsp unsweetened cacao powder
  • 1 tbsp of vanilla extract
  • 1/4 tsp of Stevia extract powder
  1. Mix all ingredients in a blender.
  2. Pour into popsicle molds.
  3. Freeze then enjoy!

  2. do you think you could make these without the bananas (perhaps sub another fruit like strawberries?)? My little one is allergic to bananas. 😦

  3. Mom2one – I would try a different ice cream recipe. You can use this one as a base ( minus the peanut butter, and put them in your popsicle molds instead of running it through the ice cream machine. Or if you want the PB, then I would scoop the ice cream mixture into the popsicle molds but that might be a little tricky. This is a great ice cream recipe though. It’s my favorite so far.
