My whole family enjoys egg salad sandwiches. There’s something comforting about the simplicity of them with a side of tomato soup. This guilt-free Almond-Crusted Egg Salad Sandwich was made using Flax Seed Focaccia Bread (to make it low-carb, gluten-free, and sugar-free) and filled with egg salad.
- chopped hard boiled egg
- a little mayo
- salt & pepper
You could add chopped up onions and celery, maybe pickles, but I like mine very simple.
I decided to add a little “crunch” and nuttiness to our sandwiches by brushing olive oil to the edges of the bread (after the sandwich has been constructed) and dipping them in almond meal. Wow… What a wonderful little touch of almond meal goodness!
