Strawberry Ice Cream

If you love strawberries, then you’re going to love this low-carb, dairy-free, gluten-free Strawberry Ice Cream recipe! It’s so refreshing and light especially on a hot day. I bet you can even top it with sliced bananas. I’ve yet to try that!


  • (1) 13.5 ounce can coconut milk
  • (1) 16 oz. basket of fresh strawberries (or you can use a package of frozen strawberries)
  • ¼ cup agave nectar
  • 1 tablespoon vanilla extract
  • ¼ teaspoon almond extract (optional*)

Blend all ingredients in a blender and pour into your ice cream maker.

(*The almond extract is optional. I’ve tried it both ways and I think adding that small amount of almond extract gives it some dimension. Quite delicious!)

  1. Thanks for the comment, Anthony. You don’t need an ice cream maker. You can put the mixture in the freezer but you’ll have to stir it up every 1-2 hours until you reach ice cream texture. But yeah, it does work as a smoothie too. 🙂
