If you love strawberries, then you’re going to love this low-carb, dairy-free, gluten-free Strawberry Ice Cream recipe! It’s so refreshing and light especially on a hot day. I bet you can even top it with sliced bananas. I’ve yet to try that!
- (1) 13.5 ounce can coconut milk
- (1) 16 oz. basket of fresh strawberries (or you can use a package of frozen strawberries)
- ¼ cup agave nectar
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract (optional*)
Blend all ingredients in a blender and pour into your ice cream maker.
(*The almond extract is optional. I’ve tried it both ways and I think adding that small amount of almond extract gives it some dimension. Quite delicious!)
